Allspice, cinnamon, blackpepper, clove, ginger, nutmeg, cardamom, mahleb-mastic, sumac and lot of onions added to one cup of white vinegar make the most flavorful SHAWARMA marinade. I usually use Sirloin but lamb may be used, cut in small strips.
Marinate for 3 days then briefly stir fry in a hot pan for about 5 mins. Place in a baking pan with 3 strips of bacon and bake at 400 for 40 mins.
Serve with Tahini sauce, parsley, tomatoes and pickles.

Pumpkin Kibbeh
What is Kibbeh?
Kibbeh (Arabic: كبة) is an Arab dish made of burgul (crushed wheat) or rice and chopped meat. The best-known variety is a torpedo-shaped fried "croquette" stuffed with minced beef or lamb.
Other types of kibbeh may be shaped into balls or patties, and baked or cooked in broth.

I made my Pumpkin Kibbeh with bulgur ( burgul) and pumpkin, and filled it with finely chopped green chard and onions, chopped pecans,chick peas,lime juice.

Pork Chops on the Grill :
The most important factor to consider when grilling pork chops is the thickness. Thin cut chops (under 3/4-inch thickness) need to be handled differently from thick cut pork chops (anything over 3/4-inch thickness). Thin chops will dry out faster so they need to be cooked quicker, while thicker chops need time to get cooked through the middle without drying out the surface so they need to be cooked slower.
I consider our pork chops as thin ... and perfectly grilled ( tender and juicy)
Resting :
This recovery period lets the meat loosen up and the juices flow through the pork chop.
This really is the most important part of the whole process....

Idea for healthy and quick snacks

Fresh Rhubarb Pie ! yummy
The first thing that came into my mind, when I first saw the fresh Rhubarb in the garden of my beloved, is to make a pie! This famous plant that has culinary and medicinal uses by its stems and very toxic by its leaves...
So I have cut about 4 stems and prepared this lovely " PIE" !
The recipe that I have followed is the following:

it was delicious in my opinion, as it was not tooo sweet ( the rhubarb has a tart taste) |
The recipe that I have followed is the following:
Ingredients
- 4 cups chopped rhubarb
- 1 1/3 cups white sugar
- 6 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 recipe pastry for a 9 inch double crust pie
Directions
- Preheat oven to 450 degrees F (230 degrees C).
- Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.
- Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 minutes. Serve warm or cold.
